this chia-spinach omelette is a delicious and healthy dinner. I love it. it’s a new creation of mine. I hope you will love it too. 🙂
chia omelette (2-3 persons):
some chia seeds
coconut oil for baking
500g frozen spinach
1 feta cheese
4 spoons cottage cheese
2 spoons coconut milk
some ricotta cheese and coriander for the topping
- mix all the omelette ingredients together until the dough is smooth and liquid. let it rest for 15-30 minutes.
- cook the spinach with a little bit of water. add the other ingredients.
- bake one omelette after the other in a pan with a bit of coconut oil. put the finished ones into your oven at 70 degrees. so they won’t get cold.
- enjoy your omelette with spinach and coriander & ricotta topping
P.S. drink some carrot juice mixed with water. it’s so yummy and the colours are beautiful together. 😉
